This study explores the development and properties of a naturally preserved garlic-infused strained yogurt in vegetable oil. The product combines the health benefits of yogurt with the potent flavors and antimicrobial properties of garlic, all preserved in a vegetable oil medium. The infusion process ensures a harmonious blend of taste and health benefits, while the vegetable oil acts as a natural preservative, extending the shelf life of the yogurt without the need for artificial additives. The sensory qualities, nutritional profile, and preservation efficiency of this innovative food product were evaluated. The results indicate that this garlic-infused strained yogurt not only offers a unique culinary experience but also maintains high nutritional value and prolonged freshness.
