ENZYMES USED IN VEGETABLE OF OIL EXTRACTION TECHNOLOGY

The characteristics of enzymes used to extract oil from plant raw materials have been studied. The conditions ensuring the extraction of oil using effective enzymes have been established, and recommendations have been given for the enzymes used in the oil and fat industry.
